18 Oct Country Cabbage Roll Soup
2 tsp. olive oil
1Lb AAA Lean Ground Beef
1 onion diced
2 cloves of garlic minced
4 cups of coarsely chopped Ontario Green Cabbage
2 carrots peeled
4 cups of beef broth
16oz of tomato sauce
1/2 cup of uncooked long grain rice
1 bay leaf
3 tbsp. of brown sugar
2 tbsp. of fresh parsley
salt & pepper to taste
Heat olive oil in a skillet. Add ground beef and season with salt & pepper. Cook meat until browned and add the onion and garlic. Cook for 2-3 more minutes.
Add carrots, cabbage, beef broth, tomato sauce, rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.
Simmer for approximately 30 minutes until rice is tender. Remove bay leaf.
Top with a dollop of sour of cream. (Optional)
Sprinkle with fresh parley and serve.
